The Achiote paste is a Peruvian or Mexican spice paste made from anatto seeds (seeds of the Orleans shrub growing in the Caribbean and South America) and other spices.
The traditional paste is often used for meat dishes from pork, chicken, stewed and marinated or even for fish dishes and seafood.
The paste is appreciated for its color. It is either rubbed straight into the meat or stretched - with lemon juice or vinegar water and oil and used as a marinade.
The Anatto seeds have an earthy bitter taste.
In Latin America, these seeds have many uses: for dyeing clothes and skin or as insect and sunscreen.
 The anatto seeds in Europe have the function of a natural alternative to dyeing eggs or different cheeses.
