Ancho chillies are a type of dried chilli pepper commonly used in Mexican and Southwestern U.S. cuisine. Ancho chillies can be reconstituted by soaking them in warm water, or they can be ground up or crushed. They have a deep red colour and a wrinkled skin. Sweet and smoky with a flavour slightly reminiscent of raisins, their heat is mild to medium-hot. Storage: Store in a cool, dry place, away from sunlight.
