Also known as yuca, cassava, macaxeira or aipim, cassava is most commonly prepared as a starch (tapioca) or as a vegetable. Cut into pieces and fried, * aipim frito * is sold almost everywhere as a Brazilian alternative to the usual potato chips. The vegetables can also be eaten cooked or used as an ingredient in cakes, puddings and pastries.

After the harvest, the cassava roots are immediately washed, peeled and cut into bite-sized pieces by YUCA LOCA. They are then slowly cooked in their own juice at low, constant temperatures. With this process, the cassava root hardly loses any of its nutrients, so it is free of preservatives and can be kept for a long time without refrigeration.
