Yerba mate is used to prepare mate tea. When served cold, it is called tereré. Mate tea is traditionally consumed in South America but is also popular in Syria and Lebanon.
Yerba mate translates to "mate herb," with the word mate originally derived from the Quechua word mati, a complex word with multiple meanings. Mati means, among other things, "container for a beverage," "infusion of an herb," and "gourd." The infusion is drunk from a container (typically a gourd) that is filled up to three-quarters full with dried leaves (and stems) of the yerba mate plant. The leaves are steeped in water at a temperature of 70-80 °C.
Depending on the country, the gourd is also called a guampa, porongo, or cuia. It is drunk through a special metal straw (bombilla in Spanish, bomba in Portuguese). The gourd is passed from one person to another (usually in a circle) and refilled.
