*BBD 08.07.24* DULCE DE MEMBRILLO or Sweet quince is a firm, sticky-sweet, coral-colored paste made from quince puree. It is cooked with sugar and water over a low fire and is eaten particularly in Mexico, Spain, Portugal, Argentina, Chile and Uruguay. It is sweet and slightly sour and is comparable in consistency, taste and use to Portuguese guava paste.
The paste is cut into thin strips and consumed on toast or sandwiches alone or with cheese. It is often served with Manchego cheese.
